Sunday Salad Cups

Salad is the main thing that comes into your mind when you are on a diet and there’s nothing wrong with that. Some people even welcomes the idea of no meat diet. Well, it’s their choice. But don’t we need protein in our diet to last a day? I guess it would not hurt to elevate it even with just a tiny bit of meat. Hardcore vegans are obviously not gonna be happy with this but they can always take the meat part out of it. They still eat tofu though, don’t they?

I got a really cute iceberg lettuce from the market and I thought of making salad cups and I’m really happy with the outcome. It’s savoury from the smokiness of the bacon and I like the texture from the tofu.

If you’ve seen my early entries you would know how much of a tofu addict I am.. So this is another way of exploring the possibilities of tofu. Lol.

Ingredients:

  • Iceberg lettuce, edges trimmed and chilled
  • Tofu cubed
  • Cucumber (cubed)
  • Bell pepper (sliced)
  • Bacon bits (fried, oil drained)
  • Tomatoes (sliced)
  • 2 tablespoon dijon mustard
  • 2 red wine vinegar
  • 2 tablespoon olive oil
  • 1 teaspoon honey
  • Salt and pepper
  • Dried oregano

Method:

Dressing

  1. Whisk vinegar, mustard, honey, oregano, salt and pepper in a small bowl. Slowly whisk in oil. Set aside.

Salad

1. Fry tofu until golden brown. Set aside

2. In a bowl, combine tofu, cucumber, bell pepper, tomatoes, bacon bits. Toss.

3. Divide the salad into three and use the lettuce leaves as a bowl. Serve with dressing on the side.
